world-ending devil wings
Chicken wings are easy to cook, affordable and scrumptious to eat - unless you have vegetarian inclinations. This recipe that has developed through 2 restaurants I have owned and has finally come to a halt and been crowned "word-ending devil wings", because if they got any better the world may end!
Dietary notes: Gluten Free, Protein Rich, Fatty (but worth it).
Preparation:
Paprika Dust
1 tablespoon sweet paprika
1/2 tablespoon smoked paprika
1/2 teaspoon cayenne pepper
1 teaspoon sugar
1 teaspoon coriander powder
1/2 teaspoon salt
Mix all ingredients together well.
Sticky sauce
1 cup fresh lime juice
1 cup sugar
1/4 cup water
Place all ingredients in saucespan and bring to a gentle simmer so it slowly reduces down to a nice thick syrup. This could take up to an hour.
Chicken Marinade
1kg chicken wings (tips removed & split in 2)
1/2 tablespoon brown sugar
1 tablespoon vegetable oil (or any other neutral oil)
1 teaspoon salt
1 teaspoon tumeric powder
1/2 teaspoon cumin powder
Mix everything but the chicken into a thick paste, then combine with the chicken in a bag or sealed container to marinate for 4 - 12 hours in refridgerator.
Method:
Heat oil to at least 100°C in deep pot or deep fryer
Fry chicken wings for 6-10 mins (take one out and check its cooked before removing all of them. )
Remove wings and place in paper-towel lined bowl, allow to rest for 1-2 min.
Remove half the wings and place them on serving plate, dowse them with sticky lime sauce.
Sprinkle paprika dust on remaning wings and toss them well in bowl. Then serve them on the plate.
Garnish with lime/lemon, fresh coriander, yoghurt or anything else you'd like to cool it down or spice it up with.
